I don't know about you, but I'm always looking for different ideas of what to make for dinner. Let's share!
Here's mine -
Shrimp Scampi w/Broccoli
1 1/2 lbs pre-cooked shrimp (medium or large) 1 package Uncle Ben's Microwave Rice (brown, long grain & wild) 1 package frozen broccoli 1/2 tsp. garlic powder (I use 1 tsp, but I like a lot of garlic) 1/4 C. lemon juice 1 tbls olive oil 1 tbls butter or butter substitute S & P
Prepare the shrimp for cooking by removing the tails and washing.
Put brocolli in microwave.
Add olive oil and butter to deep skillet on medium heat.
When butter is melted, add shrimp to pan with S & P, garlic powder and lemon juice. Cook through about 5 minutes, or until broccoli is done.
Put rice in microwave.
When rice is done, add it to the pan first, and mix. (The broccoli really absorbs a lot of lemon juice, if you add it first) Add broccoli to pan and mix.

not one to share at the moment, but a request for one: preparing birthday meal for baby girl, her husband and one of the granddaughters tomorrow. they've requested mexican menu. have their favorite taco salad, basic tacos and fajitas, but wish there was something new to throw in. any ideas with accompanying mexican recipes? i'll sure be missing 'real' tomatoes

Sounds good, anglophile! I don't make much more than you've already mentioned, but how about some Mexican rice (rice and salsa), or some homemade tortilla chips and guacamole to go with it?
I make my own chips by brushing a little olive oil on flour tortillas, then sprinkling them with a tiny bit of salt or other spices, and cutting them into wedges with a pizza cutter. Bake at 350 for 8 minutes.
I cheat and make my guacamole with just avocados and a little chunky salsa mixed in.

I'm sure I have some quick and easy recipes...but I'm still thinking about which ones to post...anyone interested in a great breakfast casserole? It's great for brunch (I make it for Christmas...by the time the kids are done opening, it's ready to eat!)

tortillas sound good. think i'll have time for that in the morning.
Quick chicken and dumplings if you got plenty of time, boil a hen, pick meat off the bones and cut into bite size pieces, then strain the broth and reserve. however, since the whole point in quick, I do it this way:
in dutch oven or heavy, deep pan, bring canned chicken broth to gentle boil and drop in skinless, boneless chicken breasts, cooking until done. Drain chicken pieces, reserving broth they were cooked in. Cut chicken into bite-sized pieces. Tear or cut flour tortillas into pieces the size you want your dumplings to be and add a few at a time to gently boiling broth you reserved. Season with salt and pepper. These will be done very quickly. Return cubed chicken to broth mixture and stir gently a few times to keep dumplings from sticking. If you want a slightly thicker broth, add a can of cream of chicken soup to the broth and stir in completely before dropping in the flour tortillas. Remember that the tortillas will absorb some of the liquid, so allow for that. If you like an oniony taste. saute some chopped onions in a little butter in the pan first, then simply add broth and complete recipe as printed above. Can also add mushrooms at the last minute if you like the taste.

Ok! This is a favorite when I take it to food day at work
6 pieces of bread, cubed 6 eggs, beaten 1 lb pork sausage, browned (feel free to use cooked crumbled bacon or cubed ham if you prefer) 2 cups shredded cheddar (you can also use shredded swiss with the ham or bacon version, or any shreddable cheese you prefer) 1 1/2 c milk seasoning to taste (salt, pepper, maybe a pinch of dry mustard. I like to use the rustic rub cajun seasoning, but I use that in almost everything)
In a large bowl, mix milk with beaten eggs, then stir in the meat and cheese, then fold in the bread. Pour into a greased casserole dish (around 9x12). Cover and refrigerate overnight. Bake at 350 for 30-45 minutes or until eggs are set and the top is browned.
This a great all purpose recipe as you can make adjustments or substitutions as you prefer (just keep the ratio of wet to dry the same!) It's also great because you make it up ahead of time and just bake it when you are ready!

kitty, thanks for the hint and rumantic your recipe sounds like something that will make me an office favorite. have a standby breakfast csserole, but i'm tired of it and ready for something new. everybody in my family is stuffed wtih mexican now and i'll be taking leftovers in tomorrow. the office loves it when i cook for my family - they always eat well the day after. still celebrating rufus' sweetness in sending us all a hug. my share of it felt so good!!
